A NOTE FROM THE KITCHEN
Ripe cooking bananas keep their shape.
The base batch makes twelve rolls, or two per serving. Use ripe but firm saba or cardaba bananas. If unavailable, use ripe yellow-black plantain cut into pieces about 4 inches long and ½ inch thick. Soft dessert bananas tend to collapse and make the wrappers soggy.

BEHIND THE DISH · Philippines
Turon · caramelized banana & jackfruit rollsBeyond the plate.
A crisp wrapper gives warm banana and jackfruit a little caramel crunch.
ORIGINS & EVOLUTION
Sweet lumpia.
Turon, or lumpiang saging, wraps ripe cooking banana in a thin spring-roll wrapper. Jackfruit is a familiar addition, bringing a distinct fragrance alongside the banana.
CULTURAL CONTEXT
A merienda favorite.
Turon is widely enjoyed as a snack and street food. Its appeal rests in a contrast that is clearest while freshly made: crisp outside, soft fruit within.
AT THE TABLE
Choose fruit that holds together.
Our rolls use firm ripe saba bananas, with plantain identified as a practical alternative. Small patches of caramel are welcome; a perfectly even sugar shell is unnecessary.
