A NOTE FROM THE KITCHEN
Begin with a purchased soup starter.
Buy ready-fermented liquid rye starter labeled zakwas na żurek or zakwas na żur, not bread sourdough starter or instant soup powder. Acidity and thickness vary by brand, so add it gradually and follow any cooking directions on the bottle. This recipe does not include home fermentation.

BEHIND THE DISH · Polish sour-rye soup traditions
Żurek · sour rye soup with sausage & eggBeyond the plate.
A fermented rye starter gives this creamy-looking soup its distinctive gentle sourness.
ORIGINS & EVOLUTION
The sour base is central.
Żurek gets its character from a fermented mixture of rye flour and water, commonly called zakwas. It is a soup starter, distinct from a loaf-making sourdough culture. Garlic, marjoram, sausage, and egg are familiar companions, although recipes and accompaniments vary.
CULTURAL CONTEXT
An Easter favorite and an everyday soup.
Żurek has a strong place on Polish Easter tables and is also served outside the holiday. Some presentations use bread bowls; others use ordinary soup bowls with sausage and egg. The balance of sourness depends on both the starter and the cook.
AT THE TABLE
A purchased starter keeps the method manageable.
Our recipe begins with bottled ready-fermented rye soup starter and includes no fermentation project. Potatoes cook before the sour liquid is added, and raw white pork sausage is cooked through separately in the broth. Cream softens the finish without replacing the rye flavor.
