A NOTE FROM THE KITCHEN
Use pure yuzu juice rather than a seasoned sauce.
This contemporary Japanese-style cooler is a home creation built around yuzu’s fragrance. Bottled unsweetened yuzu juice works well when fresh fruit is unavailable. Ponzu and yuzu kosho are savory seasonings and are not substitutes here.

ORIGINS & EVOLUTION
A Japanese ingredient in a home-created drink.
Yuzu is prized in Japanese cooking for its aromatic peel and tart juice. It appears in sauces, sweets, and drinks. This yuzu soda is a contemporary home creation, not a claim to reproduce a historic or nationally fixed recipe.
CULTURAL CONTEXT
Citrus in the glass.
In yuzu-growing areas such as Kochi, the fruit flavors market drinks and café creations as well as food. The same citrus can bring acidity to savory dishes and fragrance to a sweetened cooler.
AT THE TABLE
Pure juice, honey, and bubbles.
We use unsweetened yuzu juice with a small honey base and add cold sparkling water just before serving. Bottled pure juice makes the drink practical outside the fruit’s fresh season. A little peel is optional when fresh yuzu is available.
