A NOTE FROM THE KITCHEN
Pasteurized egg white makes the foam.
This foamy version includes pasteurized egg white suitable for uncooked use; ordinary raw shell-egg white is not a substitute here. Some whiskey sours omit egg, but the pictured version includes it. Use ready-to-use simple syrup made with equal weights of sugar and water, already cooled.

Whiskey, lemon, and sugar form a long-lived cocktail family, with foam and garnishes offering room for variation.
ORIGINS & EVOLUTION
A nineteenth-century American favorite.
The whiskey sour was established in American drinking by the nineteenth century. Its proportions changed over time: some early versions were longer and more diluted, while later recipes brought the whiskey and lemon into a shorter, sharper drink.
CULTURAL CONTEXT
Foam is one familiar branch.
Egg white became a popular addition during the twentieth century, giving a sour body and a pale foam cap. Other versions leave it out. A whiskey sour can therefore be recognizable with either a smooth surface or a light layer of foam.
AT THE TABLE
A measured, foamy version.
We use bourbon, fresh lemon, cooled simple syrup, and pasteurized egg white labeled suitable for uncooked use. A shake without ice builds foam before a second shake chills the mixture. Fresh serving ice, orange, and a cherry complete it.
