A NOTE FROM THE KITCHEN
Use actual purple yam, not just purple flavoring.
This recipe starts with frozen grated ube, thawed in the refrigerator. Check that the packet contains plain purple yam without added sugar, not prepared ube jam. Color varies naturally, so a muted purple finish is normal. Frozen-product thawing time is additional.

Ube halaya · creamy purple yam dessertBeyond the plate.
Purple yam becomes a thick, mellow dessert through patient stirring.
ORIGINS & EVOLUTION
A yam-based sweet.
Ube halaya, also called halayang ube, is a Filipino purple-yam preparation. Milk, sweetness, and fat turn the yam into a thick mixture that can be spooned or molded.
CULTURAL CONTEXT
Enjoyed on its own and in other sweets.
Halaya is served as a snack or dessert and is also used in breads, cakes, and iced treats. Recipes vary in richness, firmness, and toppings.
AT THE TABLE
Let the yam supply its color.
Our version uses plain frozen grated ube with coconut milk and dairy, without extract or a topping. The natural purple shade can vary from batch to batch.
