A NOTE FROM THE KITCHEN
Dry farmer cheese makes the dough manageable.
Syrniki belong to a shared Eastern European tradition and are enjoyed in Russia as well as neighboring countries. This version uses dry tvorog or farmer cheese made from pasteurized milk. Wet cottage cheese is not a direct substitute. The base batch makes about twelve small cakes.

ORIGINS & EVOLUTION
Cheese leads the mixture.
Syrniki are part of a shared Eastern European tradition, enjoyed in Russia and neighboring countries under related names and spellings. Farmer cheese is the main ingredient, with just enough flour and egg to bind it. They differ from a large baked cheesecake in both method and texture.
CULTURAL CONTEXT
Breakfast or a small dessert.
The lightly sweet cakes can be served at breakfast or later as a dessert. Sour cream, jam, honey, and fruit are among the familiar accompaniments. Their simplicity lets the texture and mild tang of the cheese remain noticeable.
AT THE TABLE
Dry cheese and gentle frying.
We use pasteurized-milk dry tvorog or farmer cheese, shape small thick rounds, and cook them over moderate heat. The center is checked as well as the browned surface. Measured sour cream and berry jam finish the plate, without raisins or fresh fruit in this version.
