A NOTE FROM THE KITCHEN
Thin dough makes a crisp biscuit.
This home version uses a simple cinnamon-led spice blend and plain cutters instead of carved molds. The base batch makes about 24 small biscuits, depending on the cutter; two biscuits count as one serving. Chilling is included in the total time.

Brown sugar and warm spice give these crisp biscuits plenty of flavor in a small bite.
ORIGINS & EVOLUTION
A Belgian biscuit tradition.
Speculoos are part of Belgian biscuit-making, including the repertoire of Brussels houses such as Maison Dandoy. Spice blends and decorative forms vary between makers.
CULTURAL CONTEXT
Shape and aroma.
Carved molds can give the biscuits detailed surfaces, but their crisp texture and fragrant dough matter just as much. They sit comfortably beside coffee or tea.
AT THE TABLE
Simple cutters at home.
Our version uses a cinnamon-led blend with smaller amounts of ginger, nutmeg, and cloves. Rolled dough and plain cutters make a manageable batch without specialist molds.
