A NOTE FROM THE KITCHEN
Several small measures make the Sling.
Contains alcohol. This uses the IBA’s contemporary pineapple-forward proportions. Use a sweet cherry liqueur such as Sangue Morlacco, not clear unsweetened kirsch. Raffles’ well-known drink has evolved over time; this is not presented as its exact original formula.

BEHIND THE DISH · Singapore and Raffles’ Long Bar
Singapore Sling · gin & pineappleBeyond the plate.
Gin and liqueurs sit behind pineapple and lime in a rosy cocktail with a famous hotel connection.
ORIGINS & EVOLUTION
A Raffles association with an evolving recipe.
Raffles connects the Singapore Sling with Long Bar bartender Ngiam Tong Boon. The hotel also acknowledges that today’s drink differs from its early recipe. That makes a contemporary, clearly identified formulation more useful than claiming an exact reconstruction.
CULTURAL CONTEXT
A long drink with many small components.
Cherry, orange, and herbal liqueurs contribute different flavors beneath the pineapple juice. A little grenadine and aromatic bitters complete the mixture. Shaking pineapple juice produces a light foam without egg white.
AT THE TABLE
Measured and shaken one glass at a time.
Our recipe follows the IBA’s contemporary proportions. Because each serving contains a generous amount of juice, we shake one serving at a time and strain over fresh ice. Pineapple and a preserved cherry finish the drink.
