A NOTE FROM THE KITCHEN
Let ripe tomatoes lead.
This home version follows the raw-vegetable character of Nice’s salad, with no cooked potatoes or green beans. It simplifies the seasonal mix by leaving out young artichokes and broad beans. Choose ripe tomatoes and good canned tuna in olive oil.

BEHIND THE DISH · Nice, France
Salade niçoise · tuna, tomatoes & olivesBeyond the plate.
Ripe tomatoes and crisp vegetables meet tuna, eggs, and olives in a salad with a strong local identity.
ORIGINS & EVOLUTION
Nice keeps the vegetables raw.
The Cuisine Nissarde tradition centers on raw seasonal vegetables, with eggs, tuna or anchovies, olives, and olive oil. Familiar versions elsewhere may include cooked beans and potatoes, but those are outside this local approach.
CULTURAL CONTEXT
Seasonal variety is part of the picture.
Young artichokes and broad beans can appear when available. The mixture changes with the produce at hand, while tomatoes, salty accents, and fresh herbs keep the salad bright.
AT THE TABLE
A simpler home platter.
Our version leaves out artichokes and broad beans and uses readily available pepper, radishes, and scallions. It includes tuna with optional anchovies, fully cooked eggs, and a light dressing added just before serving.
