A NOTE FROM THE KITCHEN
This batch starts with ready-made wrappers.
Use about 32 round wheat dumpling wrappers, roughly 3½ inches across. Making wrappers from scratch is not included in the timing. The batch serves four as a main course or more as an appetizer. Squeeze the salted cabbage well so the filling stays juicy without soaking the wrappers.

Pleated wrappers hold a familiar pork-and-cabbage filling, with crisp bases adding another texture.
ORIGINS & EVOLUTION
One filling in a broad dumpling family.
Jiaozi come with many fillings and cooking methods. Pork with napa cabbage is a well-established combination; boiling, steaming, and pan-frying give different finishes to the same basic form.
CULTURAL CONTEXT
Shaping is part of the experience.
A batch of dumplings invites an assembly line: one person fills, another seals. Decorative pleats are enjoyable, but a secure closure matters more than a perfect pattern.
AT THE TABLE
Ready-made wrappers, homemade filling.
Our version begins with purchased round wheat wrappers and pan-fries the dumplings before steaming them. Salted, squeezed cabbage keeps the filling moist without allowing excess liquid to soften the wrappers before cooking.
