A NOTE FROM THE KITCHEN
The poppy seeds need cooking and grinding.
The base batch makes one large roll, about ten slices. Use culinary blue or black poppy seeds and a poppy-seed mill or a meat grinder with a fine plate; an ordinary blender may not break the small seeds down well. The timings include soaking, two rises, filling cooling, and cooling the baked roll.

A dark spiral of sweet poppy filling runs through an enriched yeast roll.
ORIGINS & EVOLUTION
A familiar rolled form.
Makowiec includes several poppy-seed cakes, with the rolled yeast preparation among the most recognizable. Finely ground poppy seeds are commonly enriched with honey, dried fruit, and nuts. The dark filling contrasts with a lighter layer of dough.
CULTURAL CONTEXT
Associated with festive baking.
Poppy-seed sweets have a place in Polish Christmas and Easter baking, and makowiec also appears in bakeries through the year. Raisins, walnuts, candied peel, and different glazes can change its flavor and appearance. The spiral is created by rolling rather than by marbling a batter.
AT THE TABLE
A cooked and finely ground filling.
Our roll starts with whole culinary poppy seeds, which are softened, drained, and ground before mixing with walnuts, raisins, and honey. The filling must cool before it touches the dough. A loose parchment wrap gives the roll some support while allowing it to expand.
