A NOTE FROM THE KITCHEN
Plan the chilling time before you begin.
The base batch fits two oval metal llaneras of about 500 ml each, or a shallow oven-safe dish with about 1 liter capacity. Leave headroom. A deeper dish needs longer. Use sweetened condensed milk and unsweetened evaporated milk; they have different jobs here.

A pale custard arrives at the table under a shining layer of caramel.
ORIGINS & EVOLUTION
A rich caramel-custard tradition.
Leche flan is the Filipino expression of caramel custard. Many familiar versions use egg yolks with condensed and evaporated milk, giving a rich, close-textured result.
CULTURAL CONTEXT
A celebration-table sweet.
The dessert is often served at parties and other gatherings. Pieces can also appear with other sweets, including halo-halo, rather than only as a standalone slice.
AT THE TABLE
Gentle heat, patient chilling.
Oval llaneras are familiar molds, though a suitable shallow baking dish works too. Our water bath softens the oven heat, and refrigeration lets the custard settle before it is inverted.
