A NOTE FROM THE KITCHEN
The little squares are part of the character.
Look for dried łazanki pasta at a Polish shop. Small egg noodles are a practical substitute, though the shape will differ. Versions of this dish may include fresh cabbage, sauerkraut, sausage, or bacon; this one uses fresh cabbage and mushrooms.

ORIGINS & EVOLUTION
The name also belongs to the pasta.
Łazanki describes the small pasta shapes as well as dishes made with them. Cabbage is a frequent partner, with fresh cabbage, sauerkraut, or a mixture appearing in different versions. Meatless and meat-containing preparations both exist.
CULTURAL CONTEXT
A flexible comfort dish.
Some cooks add sausage or bacon, while others let mushrooms supply the savory element. Fresh cabbage becomes sweet as it softens; sauerkraut produces a sharper result. The ingredients can be humble without making the finished bowl feel sparse.
AT THE TABLE
Purchased pasta and fresh cabbage.
Our home version uses dried pasta squares, brown mushrooms, butter, and onion. It contains no sausage or sauerkraut. Browning mushrooms separately, then tossing them through the cooked cabbage and pasta, keeps their texture distinct.
