A NOTE FROM THE KITCHEN
A pale filling and a proper chill.
The base batch fills one 9-inch / 23 cm pie plate. Key lime juice brings the familiar flavor; fresh Persian lime juice also works, with a slightly different character. The filling is naturally pale yellow, without food coloring. Bake it fully before chilling; lime juice is not a substitute for cooking the eggs.

BEHIND THE DISH · Florida Keys and American pie traditions
Key lime pie · bright citrus & graham crustBeyond the plate.
Tart citrus, sweet condensed milk, and a crumbly crust give this chilled pie its familiar balance.
ORIGINS & EVOLUTION
A dessert closely linked to the Keys.
Key lime pie has a strong association with the Florida Keys, even though accounts of its earliest beginnings differ. Lime juice and sweetened condensed milk are central to its identity. Pastry and crumb crusts, whipped cream and meringue, give bakers several ways to finish it.
CULTURAL CONTEXT
The color is naturally subtle.
A lime pie does not need to be bright green. Egg yolks and condensed milk produce a pale filling, with the citrus supplying tartness rather than a dramatic color. Small Key limes and larger Persian limes have different flavor profiles, so the available juice shapes each home version.
AT THE TABLE
A baked filling in a graham crust.
Our pie uses graham-cracker crumbs, lime juice, condensed milk, and egg yolks. Baking sets the filling before a long refrigerator chill, and softly whipped cream is spooned onto individual slices. There is no food coloring or elaborate garnish.
