A NOTE FROM THE KITCHEN
Parcha is passion fruit.
This practical version uses unsweetened, seedless passion-fruit pulp that is already thawed if frozen. Do not substitute sweetened nectar or concentrated syrup without changing the balance. Passion-fruit drinks are enjoyed across many countries; parcha is the familiar Puerto Rican name for the fruit.

ORIGINS & EVOLUTION
A local name for passion fruit.
Parcha is the Puerto Rican name commonly used for passion fruit. The fruit is grown on the island and appears in drinks, frozen treats, and desserts. Passion-fruit juice is enjoyed in many places, so the Puerto Rican name identifies this local expression without claiming an exclusive origin.
CULTURAL CONTEXT
A balance shaped by the fruit.
The pulp has a pronounced tartness and fragrance. Water makes it easier to drink, while sugar can be adjusted to the batch of fruit and the drinker’s taste. Straining removes seeds and coarse pieces when the juice begins with whole fruit.
AT THE TABLE
Seedless pulp makes a quick pitcher.
Our recipe starts with purchased unsweetened seedless pulp that is already thawed. We dissolve sugar in part of the water, add the pulp and remaining water, then chill. Ice is the only serving addition; the drink has no alcohol or decorative garnish.
