A NOTE FROM THE KITCHEN
Leave a little fat cap.
Ask a butcher for picanha steaks, also called top sirloin cap, with the fat cap still attached. This home method uses individual steaks and a grill with a cooler side, making it easier to manage the rendered fat and finish the thicker centers.

BEHIND THE DISH · Brazil
Grilled picanhaBeyond the plate.
Picanha brings beef, salt, and the grill into close focus. Its distinctive fat edge is familiar from Brazilian steakhouse service, while the wider churrasco tradition connects professional cooks with farms, family gatherings, and public celebrations in southern Brazil.
ORIGINS & EVOLUTION
A particular cut within churrasco.
Picanha is the cap of the top sirloin, a roughly triangular muscle. In Brazilian grilling it is especially recognizable with its fat cap attached. It belongs within churrasco, the broader tradition of cooking meat over fire; picanha and churrasco are not interchangeable names for the same thing.
The passage from rural cooking to professional restaurants is visible in the history of Fogo de Chão. Its founders grew up on a farm in the Serra Gaúcha, then trained as churrasqueiros in Rio and São Paulo. Their restaurant story links learned grilling skills with the development of a commercial dining experience.
CULTURAL IMPACT
The cut became a restaurant signature.
Brazilian steakhouses have introduced picanha to diners far beyond Brazil. Fogo de Chão made it a signature cut, lightly seasoned with rock salt and served in thin slices. The company’s expansion from Brazil into the United States offers one concrete route by which that preparation reached a larger audience.
A restaurant’s selection is only one view of Brazilian grilling. Our version uses individual picanha steaks directly on the grate, keeping part of the fat cap and moving the meat between hotter and cooler areas. It brings the cut into a home setup without attempting a full steakhouse service.
SOCIAL HISTORY
The grill can make a public gathering.
Churrasco also has a life outside restaurants. For a 2026 celebration in Santa Cruz do Sul, the municipal culture department invited residents to bring their own grills, meat, and chimarrão to Praça da Bandeira. Friends, relatives, and other visitors could share the public space around food.
The planned gathering included traditional music and local crafts, placing the meal beside other expressions of regional culture. This describes churrasco as a social occasion, without claiming that everyone cooked picanha. It shows the wider setting into which this particular cut fits.
