A NOTE FROM THE KITCHEN
Unsweetened juice gives you control.
Use freshly squeezed calamansi juice or a bottled or frozen product labeled 100% unsweetened calamansi. Sweetened concentrates need a different dilution. The fruit varies in tartness, so add the syrup gradually and taste before using all of it.

BEHIND THE DISH · Philippines
Calamansi cooler · bright Filipino citrus drinkBeyond the plate.
Small citrus fruit makes a drink with a lively tart edge.
ORIGINS & EVOLUTION
Calamansi in a glass.
Calamansi juice is enjoyed as a sweetened, diluted citrus drink in Filipino cooking. The fruit has a fragrant sourness that is also useful at the savory table.
CULTURAL CONTEXT
Sweetness to suit the fruit.
There is room for personal preference in the balance of juice, water, and sugar. A small amount of syrup can soften the sharpness without hiding the citrus.
AT THE TABLE
A straightforward pitcher.
Our cooler begins with unsweetened juice and a separate syrup. Keeping the components separate until tasting makes the recipe easier to adjust for bottled juice or fresh fruit.
