A NOTE FROM THE KITCHEN

Roast the chicken, then bring it together.

Murgh makhani pairs seasoned chicken with a rich tomato, butter, and cream sauce. This home version uses an oven instead of a tandoor and smooth passata to keep the sauce simple. Dried fenugreek leaves add a distinctive savory aroma; use the leaves, not ground fenugreek seeds. The one-hour refrigerated marinade is included in the total time.

Butter chicken · murgh makhaniBeyond the plate.

Butter chicken combines seasoned chicken with a rich tomato sauce. Its history connects Partition, the rebuilding of livelihoods in Delhi, and restaurant memories that cooks carried into new kitchens.

ORIGINS & EVOLUTION

A famous dish with competing claims.

Butter chicken is closely associated with Moti Mahal in Delhi and the cooks Kundan Lal Gujral and Kundan Lal Jaggi, who moved from Peshawar during Partition in 1947. Their descendants have offered competing accounts of its invention. Those claims became a public court dispute in 2024; they should not be treated as one settled origin story.

A widely repeated explanation describes a tomato-and-butter gravy used to keep cooked tandoori chicken moist. The practical combination is clear even where the personal credit is contested: chicken is cooked first, then brought together with the sauce. Our adaptation roasts yogurt-marinated thighs in a home oven.

CULTURAL IMPACT

Restaurant memories become home recipes.

The dish’s audience grew beyond Delhi. Cook Maunika Gowardhan recalls ordering butter chicken with her family in Mumbai’s north Indian and Mughlai restaurants. Her cooking video later reached a million views, carrying those restaurant memories through digital teaching into other people’s kitchens.

Its international familiarity can obscure the regional variety of Indian food, but the individual memories are valuable: a favorite restaurant, a familiar sauce, a meal with family. Our version keeps tomato, butter, cream, and warming spices central while using smooth passata and ordinary oven-and-stovetop equipment.

SOCIAL HISTORY

Food after displacement.

Partition displaced millions amid communal violence. The cooks’ move places Moti Mahal within that upheaval. Establishing a restaurant meant rebuilding a livelihood while introducing customers to the food they knew and developed.

Madhur Jaffrey remembered eating at Moti Mahal as a teenager, with naan and pickled onion, and its food becoming fashionable for picnics. Her recollections show the dish entering city life through restaurant visits, take-away meals, and lasting memories.
