A NOTE FROM THE KITCHEN
Use tender young coconut and plain agar powder.
Choose frozen or canned young-coconut flesh, thawed or drained as needed, rather than firm dried coconut. This recipe uses pure agar powder, not a sweetened jelly mix; check the packet because setting strength differs. Pandan extract supplies fragrance and may also tint the jelly.

BEHIND THE DISH · Philippines
Buko pandan drink · coconut & fragrant jellyBeyond the plate.
Young coconut and pandan jelly turn a chilled drink into a playful spoonful.
ORIGINS & EVOLUTION
A familiar coconut pairing.
Buko means young coconut. Buko pandan drinks bring its tender flesh together with fragrant pandan jelly and a creamy coconut base.
CULTURAL CONTEXT
Texture is part of the refreshment.
The drink carries coconut strips and soft jelly, giving it more to enjoy than liquid alone. It is served well chilled, often with ice.
AT THE TABLE
A pure-agar home version.
We set the jelly with plain agar powder and coconut water, then add it to the chilled drink. This differs from sweetened packet mixes, whose water and sugar requirements vary.
