A NOTE FROM THE KITCHEN
Roast the flour slowly and thoroughly.
The base batch makes about twelve small ladoo, one per serving. Buy besan, or gram flour made from chana dal, from an Indian grocer. Finely ground granulated sugar works well here; measure the sugar before grinding.

Slowly roasted flour brings a surprisingly deep aroma to a small hand-shaped sweet.
ORIGINS & EVOLUTION
Gram flour, ghee, and sugar.
Besan ladoo is part of the many Indian sweets shaped into small rounds. Its defining ingredient is besan, the gram flour made from chana dal. Slow roasting changes the flour’s aroma and color before sugar is mixed in.
CULTURAL CONTEXT
A familiar festive sweet.
Ladoo appear in many celebrations, and besan ladoo is a recognizable part of festive sweet assortments, including Diwali. The ingredients are relatively simple, but the roasting and shaping give the cook an important role in the final texture.
AT THE TABLE
A gently roasted home batch.
We roast sifted besan in ghee over low heat, then let it cool before adding finely ground sugar and cardamom. The rounds are pressed and rolled by hand. Slight differences in size are a natural part of making them at home.
